Vada Pav



Ingredients:

4-5 Potatoes, boiled
1 Onion, finely chopped
5-6 Green Chillies
3 cloves Garlic
1 inch Ginger
5-6 Curry leaves
1 tsp Mustard Seeds
1 tsp Cumin Seeds
A pinch of Asafoetida
1 tsp Turmeric

11/2 cups Besan/Chickpea Flour
2 tsp Red Chilli Powder
½ tsp Sodium Bicarb

Water
Salt
Oil for Frying

How to proceed:

Mash boiled potatoes, grind garlic, ginger and green chillies to a paste.Heat 2 tbsp Oil in a pan, add curry leaves, mustard seeds, cumin seeds and asafetida.When mustard seeds start spluttering, add the paste and sauté for 30 sec Now add onion and fry till it turns brown Add turmeric and mashed potatoes and mix well. Add salt as desired Cook covered for 5-7 mins and leave aside to cool When mixture cools, make small balls and flatten them a bit. Make batter by adding water to besan; add red chilli powder, turmeric, soda and salt to it. Heat oil in a pan. Dip the balls in batter and slide in hot oil. Deep fry on both sides. Fry on medium gas to cook it evenly. Serve hot with some chutney and green chillies
